This is the recipe that I talked about last Thursday to go on the 2 layer pumpkin cake. It is very yummy, I received lots of compliments on it. It isn't a stiff frosting. I just let is fall down the side of the cake. Hope you like it!Pumpkin Cream Cheese Spread
Ingredients
1 8oz package 1/3 less fat cream cheese
1/2 cup canned pumpkin
1/2 cup evaporated cane juice
1/2 teaspoon vanilla
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger
Directions
Beat all ingredients in a medium mixing bowl with an electric mixer on medium speed until smooth. Cover and refrigerate for about an hour, then spread on cake or use for cookies dip.
